Strawberry Salad

Ingredients:

1. 5 ounces arugula
2. 1 lb strawberries, leave three whole strawberries on the side. Thinly slice the rest.
3. 4 ounces crumbled goat cheese or feta, or 1 ripe avocado, diced
4. 1 tablespoon Strawberry Kiwi Rose White Balsamic Vinegar
5. 1 tablespoon Persian Lime Infused Olive Oil
6. 1 cup non-fat Greek yogurt
7. Pinch of fine sea salt to taste
8. Ground black pepper, to taste
9. Optional: ½ cup roasted and salted sunflower seeds

Directions:

1. Balsamic vinaigrette:
   • In a small blender, combine 3 whole strawberries, Strawberry Kiwi Rose White Balsamic Vinegar, Persian Lime Infused Olive Oil, and yogurt.
   • Blend the mixture
   • Taste, and add more salt or pepper if needed.
2. To assemble the salad:
   • Layer the arugula, sliced strawberries, cheese, and nuts on a large serving platter or bowl.
   • When you’re ready to serve the salad, drizzle the vinaigrette over it and toss to combine.
3. Serve promptly.
