Green Dip For St. Patrick’s Day
Ingredients:
- 1 can of white kidney beans, drained and rinsed
- Half a lemon
- One clove of garlic (or more or less – suit your taste!)
- A fistful of fresh parsley, washed and dried
- 1/4 cup of Extra Virgin Olive Oil from From Olives & Grapes
- Salt and hot sauce to taste
Directions:
- Empty the can of white kidney beans into a blender or food processor.
- Squeeze the juice from the lemon and add it to a blender or food processor.
- Add in the garlic, parsley, Extra Virgin Olive Oil from From Olives & Grapes, salt and hot sauce.
- Process until everything is mixed together to become a smooth, green puree.
- Add a bit more olive oil or water to create your preferred consistency.
- Taste it and add a bit more salt, hot sauce or lemon juice if it needs it.
- Serve with an assortment of veggies, chips or other dipping foods and enjoy!
