Mandarin Salad with Mani Orange Fused Olive Oil

Ingredients:

1. 2 tablespoons from Olives & Grapes Mani Orange Fused Olive Oil
2. 3 tablespoons from Olives & Grapes Cara Cara Orange Vanilla Balsamic Vinegar
3. 1 package Organic Spring Mix lettuce  Or lettuce blend of your choice
4. 1 small tomato, diced
5. 1 English cucumber, diced
6. 1 or 2 ripe avocados
7. 1 or 2 fresh mandarin oranges, peeled
8. 1/2 cup dried cranberries
9. 1/2 cup of your choice nuts
10. A few pinches of sea salt
11. A few pinches of crushed pepper

Directions:

1. Whisk together the Olive Oil and Balsamic for the vinaigrette, taste, and adjust salt and pepper as needed.
2. In a large bowl, toss lettuce, tomatoes, cucumber, avocado, nuts, mandarin oranges, and cranberries.
3. Serve the vinaigrette on the side or drizzle on top of the salad.
