Mediterranean Chickpea Salad

Ingredients:

1. 15 ounce can Chickpeas, drained and rinsed
2. 1 English Cucumber, halved lengthwise and cut into rough chunks
3. 1 Pint Cherry Tomatoes, halved
4. 2 tablespoons chopped fresh Parsley
5. ¾ cup brined Artichokes, chopped
6. 1 medium Red Onion, diced
7. 2 medium avocados (firm but ripe), sliced into bite size pieces
8. Salt and pepper to taste

Optional: Feta cheese

For The Dressing: 

1. ¼ cup Extra Virgin Olive Oil from From Olives and Grapes
2. 2-3 tablespoons freshly squeezed Lemon Juice
3. 2 tablespoons Mediterranean Blend Vinegar from From Olives and Grapes
4. 1 tablespoon Honey
5. 1 teaspoon minced garlic (about 2 cloves)
6. Salt and pepper to taste
