New Year’s Resolution Salad

Ingredients:

1. 1 cup of shredded carrots
2. Leafy salad greens, about two hands full
3. 1 small apple or pear, dice or slice
4. 3 fresh strawberries, sliced
5. 1 cup of chopped boiled or roasted chicken breast
6. 1/4 cup roasted walnut
7. 1/4 cup From Olives & Grapes 100% Pure Roasted California Walnut Oil
8. 1/2 cup From Olives & Grapes Cascadian Wild Raspberry or Cranberry Pear white balsamic vinegar
9. 1 small lime
10. Salt to taste

Directions:

1. Chicken: Chop 1 cup of cooked chicken breasts. To save time, you can also use rotisserie chicken.
2. Dressing: Combine walnut oil with white balsamic vinegar, lemon juice, and a pinch of salt to taste. Mix well.
3. Combine all together in the salad bowl, drizzle the salad dressing on the top. Mix them well.
4. Serve immediately
