Peach and Heirloom Tomato Salad

Ingredients:

1. 3 Peaches ( not too ripe)
2. 3 medium Heirloom Tomatoes
3. 1 tablespoon of any of our 100% Pure Extra Virgin Olive Oil
4. 2 teaspoons fresh Lemon Juice, or to taste
5. 1 Tablespoon Pomegranate Quince Balsamic Vinegar
6. 1 small bunch basil leaves, chopped
7. Sea Salt, to taste
8. 2 balls (4 oz) Burrata cheese
9. Parmesan cheese
10. 2 tablespoons of crusted, toasted pistachio nuts

Directions:

1. Prepare vinaigrette: In a jar or medium bowl, combine vinaigrette ingredients well – your choice of any of our 100% Pure Extra Virgin Olive Oil, lemon juice, Pomegranate Quince Balsamic Vinegar, salt, and pepper.
2. Pit and slice the peaches.
3. Cut the tomatoes into slices or wedges.
4. Mix in the vinaigrette and chopped basil and leave it in the refrigerator until serving.
5. Assemble the salad: On a plate, shred the Burrata cheese and assemble sliced peaches and tomatoes on top of the cheese. Garnish with sliced Parmesan cheese and pistachio nuts.
