Spinach Pasta Salad
Ingredients:
- 8 oz pasta (Penne, Rotini, or Bowtie)
- 2 cups packed fresh baby spinach – rinsed
- 1/2 cup packed fresh basil leaves
- 1/3 cup From Olives and Grapes Cobrancosa 100% Pure Extra Virgin Olive Oil
- 2 tablespoons lemon juice
- 1/2 cup roasted crushed walnuts
- Salt and freshly cracked black pepper, to taste
Directions:
- Cook pasta: Boil the pasta in a large pot of salted water according to the package directions until al dente. Drain and rinse thoroughly with cold water. Set aside to cool.
- Blend sauce: Add spinach, basil, From Olives and Grapes Cobrancosa 100% Pure Extra Virgin Olive Oil, lemon juice, salt, and pepper to a food processor or high-speed blender. Blend until completely smooth and bright green.
- Pour the blended spinach sauce over the pasta mixture. Toss gently until everything is evenly coated.
- Serve: Enjoy immediately at room temperature, or chill in the refrigerator for about 30 minutes to let the flavors meld. Sprinkle the pasta with walnuts before serving.
